LAMBRUSCO DI SORBARA DOC (controlled origin denomination)
This ancient vine takes its name from the Roman term “vitis labrusca” and is grown in the plain surrounding Modena, in the fertile land between the river Panaro and the river Secchia. It has sparse bunches with a tapered shape and a peculiar feature: millerandage, i.e. the grapes may remain small in size due to a reproductive anomaly occurring in the flower, resulting in considerably reduced quantities. This peculiar feature increases the quality standard of the grapes.
VINIFICATION: This Lambrusco is a pure Sorbara, obtained from the vinification of grapes grown at Sorbara, in the historical and renowned “zona del Cristo” area. The processing of the grapes follows the traditional methods of vinification: maceration on the skins for 2 days, alcoholic fermentation, refermentation in heat-controlled tanks or in the bottle, resulting in a Lambrusco with the distinctive characteristics of a Sorbara.

NOSE: intense and fine notes of violet and fruits of the forest.

VINIFICATION: maceration on the skins for 2 days, alcoholic fermentation, refermentation in heat-controlled tanks
PREFERRED ACCOMPANIMENTS: Perfect with the traditional dishes from the Emilia area since its special acidity enhances any fatty and richly flavoured food. Serve at a temperature of 16°C. Served slightly chilled (12°C-14°C), it can accompany fish or be taken as an aperitif.
