VINIFICATION: maceration on the skins for 3 days, alcoholic fermentation, refermentation in heat-controlled tanks

RECOMMENDED ACCOMPANIMENTS: tortellini in consommé, local cold cuts from the Emilia area, boiled meats, zampone (pig’s trotter stuffed with salted and flavoured minced meat), cotechino (boiled pork sausage), red meat dishes, rich pasta dishes.
